You scanned the QR code — which means your live hard-shell lobsters have officially arrived, and you’re now part of the Lobsterboys Supper Club, our community of home cooks, food lovers, and curious eaters who believe great meals bring people together.

 

Every box is an invitation to slow down, gather your people, and create something memorable. This page walks you step-by-step through your feast — and shows you how to share your Supper Club moment for a chance to win free lobster, gift cards, family boxes, and monthly surprises.

1. Supper Club Unboxing: Start Your Experience

Your box is cold-packed and sealed for overnight transit — but your Supper Club moment begins the second the box hits your kitchen counter.

Before opening:

  • Record your continuous, uncut unboxing video within 6 hours of delivery (required for our Refund Policy)
  • Capture the unsealing of the original cardboard box, cutting the tape, and your first opening
  • Then lift the flaps and reveal the proprietary insulated styrofoam cooler inside. 
  • Open up the cooler and remove the top soaker pad.  Underneath you will find your amazing lobsters.  
  • Remove each - one at a time, turn them on their backs and you will be able to see that they are alive. 
  • Every once in a while a lobster doesn’t make the journey.  If you do have any dead lobsters, please notify Claims@lobsterboys.com.  Submit within 6 hours of delivery.

2. Handling Your Lobsters

Hard-shell lobsters are strong and feisty so be careful.

To pick up safely:

  • Grip firmly behind the claws at the back of the body
  • Keep fingers clear of the front claws
  • Support the tail — it may naturally flex

Hard-shell North Atlantic lobsters stay strong for 24 hours refrigerated after delivery. For peak quality, cook within 24 hours of delivery.

3. Dispatching the Lobster (Fast, Humane, Professional)


For clarity and minimal stress, we recommend the Instant Dispatch (Knife Method).

Instant Dispatch (Knife Method)

  1. Place lobster flat on a cutting board.
  2. Position the knife tip at the cross on top of the head (black line near the eyes).
  3. Press down swiftly, then split forward.

The lobster is dispatched instantly and humanely.

Knife & Shear Recommendations

Hard-shell lobsters are wonderful but cracking the shells are work if you don’t have the right knife or shears.  We recommend Zwilling because these are professional kitchen grade and will stand up to regular use over years.

4. Cooking Your Lobster (Perfect Every Time)

Recommended Equipment

  • Large stock pot or lobster pot  Stainless steel pot is preferred.  For 2 to 4 two-pound lobsters, a pot that is at least 12 quarts is needed, but a larger 16 to 20-quart pot is ideal to ensure they aren't crowded for even cooking

  • Steamer basket. Stainless steel. You'll need an 8-quart pot for two lobsters, and a larger 16-20 quart pot for 3-4 lobsters. The key is to add only a couple of inches of water to the bottom 


Steaming Times - Remember, don’t overcook. It makes the meat a little tough. 

  • 1–1.25 lb: 6-8 minutes
  • 1.5 lb: 8-10 minutes
  • 2 lb: 10-13 minutes
  • 2.5–3 lb: 13–15 minutes (Add ~2 minutes for each additional lobster)

Boiling  Same timing as steaming.  Salted water.  Let rest 5 minutes before cracking.

Remember: The Salt Matters: 2 tablespoons of salt per quart of water. This creates a seawater-style brine that seasons the meat lightly and helps it cook evenly.

5. Cracking Open Your Lobster

The right tools make the Supper Club experience much easier, and more enjoyable.


Our preferred tools:

  1. Kitchen Shears and Chef Knife For tails and cutting through claws and shells. 
  2. Pick Set Reaches every channel of knuckle and body meat.
  3. Rolling pin Roll out the legs so you get the sweetest meat inside each leg.


6. Getting Every Bite: Tail, Claws, Knuckles, Legs

Tail:

Twist and pull tail from body.

Use shears to cut underside.

Remove meat in one perfect piece.


Claws:
Twist claw from knuckle.
Crack gently at seam.
Pull out whole.

 


Knuckles:

Cut the knuckle with shears. Use a pick to gently follow the channels — sweetest meat in the lobster.


Legs:

Snip legs at one end. Roll with a rolling pin or simply bite & squeeze for the small but delicious leg meat.

7. Lobster + Butter: What We Recommend

When you’re working with live, hard-shell North Atlantic lobster, the butter matters. Great lobster doesn’t need much — just heat, salt, and a butter that lets the sweetness of the meat shine.

Here’s what we suggest:

1. Use high-fat European-style butter (Raw if available) 

Look for 82% butterfat or higher. It melts smoother, tastes richer, and gives you that classic lobster “drawn butter” texture.

2. Keep it simple (at first)

Start with pure melted butter. Taste your lobster as-is. Hard-shell meat is naturally sweet and briny — the good stuff doesn’t need heavy seasoning.

3. Add aromatics only if you want
If you like a little extra flavor, warm your butter gently with:
 

  • A smashed garlic clove

  • A squeeze of lemon

  • A sprig of fresh parsley or tarragon
 
  • An extra pinch of sea salt

Keep it light — the butter should complement the lobster, not cover it.

4. Clarified butter = next level
If you want restaurant-style dipping butter, simmer and skim until the milk solids separate. You’ll get a clean, golden butter that stays perfectly clear and won’t burn.

5. Portion guide
Plan on 2–3 tablespoons of butter per lobster for dipping.
