Ingredients You’ll Need


  • 2 live hard shell lobsters (about 2 lbs each)
  • 2 cups large elbow macaroni (cooked to al dente)
  • 1 cup whole milk
  • 6–8 slices American cheese
  • ½ cup shredded cheddar cheese
  • 4 slices sourdough bread
  • 4 slices cheddar cheese (for layering)
  • Butter, for grilling

Step 1: Cook the Lobster

  • Boil lobsters in salted water (add lemon wedges for extra flavor) for about 10 minutes until shells turn bright red. (See how to cook our lobster)
  • Let cool slightly, then crack and chop the meat into bite-sized chunks.

Step 2: Make the Mac & Cheese

  • Cook elbow macaroni until al dente.
  • In a medium pot over medium-low heat, pour in the milk.
  • Whisk in one slice of American cheese at a time until melted.
  • Stir in shredded cheddar until smooth and creamy.
  • Fold lobster meat into the cheese sauce and pasta.

Step 3: Build the Sandwich

  • Butter the outside of each slice of sourdough bread.
  • Layer: cheddar slice → lobster mac & cheese → more cheddar → top slice of bread.

Step 4: Grill the Sandwich

  • Heat a skillet over medium heat.
  • Grill each sandwich until the bread is golden brown and crispy, and the cheese is melty.
  • Press gently with a spatula to help everything bind together.

Step 5: Serve Immediately

  • Slice diagonally, serve hot, and enjoy that perfect mix of crispy, creamy, and lobster-sweet.
